Step 1: Prep the Pasta in Advance
To make pasta look its best on camera:
- Cook it ahead of time until it’s just slightly under al dente. Once it’s done, rinse with cold water to stop the cooking process.
- Toss it with a bit of olive oil to keep it from sticking, and let it cool completely before storing it in the fridge. This prevents it from getting overcooked or sweaty.
Step 2: Build a Stable Pasta Base with Instant Mashed Potatoes
To keep your pasta mound from sinking:
- Use instant mashed potatoes to create a stable base. Shape the mashed potatoes into a small mound in the center of the plate, which will support the pasta and prevent it from collapsing.
- This base also helps add height and volume, ensuring your pasta looks full and inviting.
Step 3: Arrange Long, Unbroken Pasta Strands for a Dramatic Look
For pasta styling:
- Keep your noodles as long as possible. This gives the plate a beautiful, flowing look that is much more appealing than shorter, broken strands.
- Separate the strands over your hands, letting them drape naturally as you lay them on the base. This creates a nice twirl effect, adding depth and movement to the dish.
Step 4: Add the Sauce Strategically
When it comes to saucing:
- Lightly layer the sauce over the pasta instead of mixing it all in. This gives you control over the placement and visual appeal of the sauce.
- Avoid over-saturating the pasta with sauce, as it can weigh down the dish and make it look less appetizing. Use a pipette to precisely add small amounts of sauce where needed.
Step 5: Add Finishing Touches with Garnishes and Gloss
To enhance the final look:
- Add a sprinkle of coarse black pepper and salt for texture. This not only boosts the visual appeal but also adds a touch of realism.
- Use a small spray bottle filled with water or a brush with a little bit of oil to give the pasta a fresh, glossy look.
- Finish with some parmesan cheese for added texture and garnish with fresh herbs like parsley or basil for a pop of color. Make sure to add the herbs right before shooting to keep them vibrant and fresh.
Step 6: Refresh as Needed
Pasta can dry out quickly on set, so:
- Keep a spray bottle handy to mist the pasta and maintain its fresh appearance. This small touch can go a long way in keeping the dish camera-ready for longer.
